Main ingredients: 80g lean pork, 100g scallions, 110g eggs, 40 wonton wrappers, 50g cabbage.
Accessories: an appropriate amount of oil, an appropriate amount of salt, 1/8 teaspoon of five-spice powder, 1/2 teaspoon of cooking wine, 2 tablespoons + 1 tablespoon of sesame oil, 1/4 teaspoon of chicken essence, 1/8 teaspoon of white pepper, an appropriate amount of water.
Method
1. Wash the pork, chop it into minced meat, sprinkle a little cool water on the meat while chopping, mix in 1/4 teaspoon of salt, five-spice powder, and cooking wine, stir well, and let it stand for 10 minutes.
2. Pour an appropriate amount of oil into a frying pan, beat the eggs, pour them into the pan when the oil is slightly warm, and stir-fry until cooked, then transfer to a cutting board and chop into fine pieces.
3. Wash the scallions, drain the water, chop them into fine pieces, set aside 15 grams (to be added to the soup later), and put the rest in a large bowl.
4. Add egg pieces and 1/2 teaspoon of salt, and mix well.
5. Add the meat filling, 1 tablespoon of oil, and 2 teaspoons of sesame oil, and mix well.
6. Place a wonton wrapper in the left hand, use a chopstick to pick an appropriate amount of filling and place it in a corner slightly below the corner of the wonton wrapper, and use the thumb of the left hand to flip the corner of the wrapper over to cover the filling.
7. Roll the wrapper and filling forward until about 2 cm from the other corner, then pull out the chopsticks.
8. Fold one side of the wrapper inward, dip your hand in water, and spread it on the folded wonton wrapper.
9. Fold the other side of the wrapper inward and press it on the side that has been dampened with water, and slightly press with both hands to make it stick together.
10. Put an appropriate amount of water in the pot, cut the cabbage into thin strips, and add the cabbage strips when the water boils.
11. Once the water boils again, add the wontons one by one, add an appropriate amount of salt, chicken essence, and white pepper, and boil for about 5 minutes until they are cooked.
