How to make pork skin jelly? Home cooking method

Main ingredient: 500 grams of pork skin
Seasonings: Salt to taste, 2 teaspoons of vinegar, a little chicken bouillon, 1 large slice of ginger, 2 cloves of garlic, 2 star anise, 10 Sichuan peppercorns, a small piece of cassia bark, 1 teaspoon of cooking wine, 4 teaspoons of soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of sesame oil, 1 cardamom, 2 bay leaves, 2 teaspoons of chili oil, 0.8 teaspoon of sugar
1. Clean the pork skin, scrape off the surface dirt and residual hair with a knife.
2. Cut the pork skin into small pieces, put it in a pot with an appropriate amount of water, boil for about 5 minutes, then remove it.
3. Rinse it with cold water, then scrape off the surface fat with a knife and rinse it clean with water.
4. Cut the cleaned pork skin into small pieces.
5. Put an appropriate amount of water (about twice the amount of the pork skin) in the pot, wrap two star anise, a small piece of cassia bark, more than ten Sichuan peppercorns, one cardamom, two cloves of garlic, a large piece of ginger (sliced), and two pieces of bay leaf (torn into small pieces) in a cheesecloth, and put it in the water.
6. Boil for about 5 minutes.
7. Add the pork skin, 0.5 teaspoon of sugar, 3 teaspoons of soy sauce, 1 teaspoon of dark soy sauce, 1 teaspoon of cooking wine, and an appropriate amount of salt.
8. Cover the pot, cook over low to medium heat for more than 1 hour (the pork skin should be easy to pierce with a chopstick after cooking).
9. Turn off the heat and remove the spice bag.
10. After it cools down, pour the pork skin and soup together into a storage box, put it in the refrigerator, and chill it for one night.
11. Cut the set pork skin jelly into small pieces.
12. Mix minced garlic, minced ginger, 2 teaspoons of chili oil (see instructions here), 0.3 teaspoon of sugar, a little salt, a little chicken bouillon, 1 teaspoon of sesame oil, 1 teaspoon of soy sauce, and 2 teaspoons of vinegar in a small bowl, then pour it over the pork skin.
