What are the steps for making hand-pulled noodles?
Compared to machine-made noodles, hand-pulled noodles have more bite and better texture. The key to making hand-pulled noodles lies in the kneading technique. To make the noodles more chewy, the dough should not be too thin, try to keep it dry. This way, the homemade noodles will be more appetizing, and you will eat more when they are ready. They can be used for sauce or mixed with soup.
Main ingredients: 200g flour, 100g Chinese cabbage
Method/Step
Step 1: Pour the flour into the small bowl for mixing, and seven aunts added a little yeast
Step 2: Make a well in the middle of the flour and add an appropriate amount of warm water
Step 3: Start mixing the flour and water, and keep kneading
Step 4: When the dough is ready, the edges of the bowl are almost smooth, then cover the dough with a damp cloth and let it rest for a while
Step 5: While the dough is resting, wash the cabbage
Step 6: Cut the cabbage stalks and leaves into strips separately, do not mix them together yet
Step 7: Wash the green peppers and cut them into strips
Step 8: After about 20 minutes, start kneading the dough
Step 9: Roll the dough into a circle with a rolling pin
Step 10: Apply some dry starch on both sides of the round of dough to prevent them from sticking together when rolling
Step 11: Wrap the round of dough layer by layer around the rolling pin and keep rolling
Step 12: With each roll, the round of dough gets bigger and thinner
Step 13: For unevenly thick parts, use a rolling pin to process them further
Step 14: Stack the noodle sheets one on top of the other, one face up and one face down
Step 15: Cut the noodle sheets with a knife into strips about one centimeter wide
Step 16: Arrange the folded noodles
Step 17: Turn on low heat, pour in an appropriate amount of oil into the pot
Step 18: First stir-fry the cabbage stalks because they are not easy to soften
Step 19: Add a moderate amount of salt and stir well
Step 20: Add the cabbage leaves to the pot and stir-fry until they change color
Step 21: Pour in half a pot of water
Step 22: Pour in the fresh soy sauce into the water
Step 23: Scatter the noodles and put them in
Step 24: Cover the pot with a lid and simmer, add cold water once the water boils, and then continue to simmer
Step 25: After the noodles are soft, add shredded green peppers to make the color look better
The steaming hot hand-pulled noodles are ready
The family loves to eat noodles, we have bought many from the market, but they always turn out soft and not very springy when cooked. Finally, I tried making them myself and managed to achieve the texture that the family loves. Although I don’t have a pasta machine, I rely on hand kneading to create the springy bite of the noodles. Seeing the family enjoy them makes all the hard work worthwhile~
