One, Mixed Rice Noodles

The method of making mixed rice noodles is simple, and the mixed rice noodles have delicate color and rich taste; prepare a piece of rice noodle, how much depends on the number of people at home. It is not advisable to mix too many rice noodles at one time, as some rice noodles may not be coated with the dressing, affecting the texture. The key to making mixed rice noodles is to blanch the rice noodles in boiling water for a while, then remove them, cool them down, drain them, and put them in a small bowl.

If there is sesame oil, you can also add a little; some people like scallions, you can clean them, cut them into small pieces, and sprinkle them on top. The next very important step is to pour oil, heat the oil in the induction cooker, then quickly pour it into the rice noodles, stir the rice noodles quickly after pouring oil, so that the rice noodles become shiny. It is not advisable to let the rice noodles sit for too long, as they are best eaten hot.
Two, Stir-fried Rice Noodles

The characteristic of stir-fried rice noodles is that different ingredients can be added according to personal preference, such as mushrooms, black fungus, ham, etc. Both meat and vegetables can be well matched. After matching, not only can it enhance the flavor, but also add color, making it full of color, aroma, and taste. Another step in making stir-fried rice noodles is to slightly blanch the rice noodles, some may just soak them in water, and then remove them when stir-frying.
2, The ingredients needed for stir-fried rice noodles can be many, here we choose mushrooms, carrots, cabbage, and eggs. Prepare these ingredients, fry the eggs and break them into pieces after they are shaped; clean the mushrooms and cut them into thin slices; choose the tender part of the cabbage; carrots are used for coloring.
3, After all these are prepared, you can start stir-frying. First, stir-fry the cabbage, mushrooms, and carrots until they are 7/10 cooked, then add the previously soaked rice noodles, and stir-fry vigorously over high heat until it’s done. Rice noodles are already cooked and should not be stir-fried for too long, as they absorb oil easily. More oil should be added at the beginning to prevent burning.
Three, Sour and Spicy Rice Noodles
1, Finally, let’s introduce a relatively complex process – Sour and Spicy Rice Noodles. Here, tomatoes + a little vinegar are used as the main ingredients for sourness, and a little chili is used for spiciness. In the middle, you can also add some sprouts, konjac noodles, mushrooms, and the like. After processing these ingredients, the tomatoes are first soaked in hot water for a while until the skin cracks, then peeled off, and then chopped into small pieces. The rice noodles used for Sour and Spicy Flour are made of sweet potato flour and need to be soaked in advance.
2, After all these are prepared, you can start making it. First, add some oil, stir-fry the chili for a while, then add the minced tomatoes, sprouts, and green vegetables.
