This way of making steamed rice flour pork is loved by both adults and children.
Steamed rice flour pork, also known as rice flour pork, is a delicious dish that is not greasy. If done well, it is delicious and addictive, extremely smooth and tender, and is truly a rare delicacy. However, the method of making rice flour pork requires some skill. Only by paying close attention to every detail and skillfully mastering each step can the steamed rice flour pork be uniquely flavored and loved by both the young and the old.
Materials:
Pork belly, rice (you can add glutinous rice if you like it soft), scallions, ginger, salt, chicken essence, soy sauce, sugar, cooking wine, star anise, sweet bean paste
Method:
1. Grind rice or a mixture of rice and glutinous rice in a 1:1 ratio.
After mixing in a 4:1 ratio, soak for a moment, dry it, then add one star anise to the wok and sauté over low heat until it changes color. Remove and set aside as rice flour.
2. Cut the pork belly into slices of equal size, add scallions, ginger, star anise, sweet bean paste, salt, chicken essence, soy sauce, cooking wine, sugar, and marinate. Note that sweet bean paste is a must-have. This is the secret ingredient that makes my rice flour pork so delicious.
3. Coat the marinated meat slices evenly with rice flour, place them in bowls that are suitable for steaming and add water. The rice flour should be slightly moist. Steam over high heat for 1-2 hours. (If using a pressure cooker, it will take 40-50 minutes. If using a rice cooker, it will take at least 2 hours.)
Materials:
Ingredients: 50 grams of rice, 250 grams of pork belly, a little Sichuan pepper, 15 grams of soy sauce, 8 grams of dark soy sauce, 15 grams of Chinese rice wine, 5 grams of sugar, 3 grams of salt, about 20 grams of water.
Method
1. Add the rice and sauté with Sichuan pepper until fragrant.
2. Then put it into the blender.
3. Grind it into flour.
4. Do not grind the flour too finely, as some texture will be better.
5. Then prepare the meat, make sure it’s pork belly, as it will taste fragrant after steaming.
6. Clean the skin of the meat thoroughly.
7. Cut the meat into thin slices.
8. Set aside the sliced meat that has been cut.
9. Start adding the seasonings.
10. Add rice flour.
11. Mix evenly.
12. Marinate for 30 minutes.
13. Then place the slices of meat facing down, arranging them one by one in the bowl.
14. Since rice flour is dry, it absorbs the seasoning quickly.
15. Therefore, add a little water appropriately to avoid the dish being too dry after steaming.
16. Place it in the pot, cover the lid, and steam for about 90 minutes. Make sure to add enough water at the beginning, so you can comfortably do other things while steaming.
