一、Ingredients
Ingredients: 2 yellow croakers, 200 grams of tofu, appropriate amounts of scallions, ginger, garlic, 4-5 dried chili peppers, a little starch, cooking wine, soy sauce, appropriate amounts of vinegar, salt, and a little sugar.

1. Clean the yellow croaker (the head can be left or removed, as my pot is a bit small, so I removed the head). Cut the tofu into blocks, chop the scallions, ginger, and garlic into small pieces, and break the dried chili peppers into small segments.
2. Dry the washed yellow croaker with kitchen paper and make sure all the moisture on the fish is wiped off.
3. Apply a thin layer of starch on the fish.
4. Heat the pot, first rub the pot wall with ginger slices, then add oil (very important for not breaking the fish skin when frying fish, the 2nd, 3rd, and 4th steps are very important);
5. Place the fish in the pan when the oil is slightly warm, flip it after 2 minutes, and then fry for another 2 minutes.
6. Separate the two fish slightly, leave some space in the pot, and then add dried chili peppers, and stir-fry scallions, ginger, and garlic for a while.
7. Add soy sauce, cooking wine, and salt, and then pour in the tofu blocks.
8. Add water to the pot, enough to cover the fish and tofu. Bring to a boil over high heat, then reduce to medium-low heat and add vinegar, boiling for about 15 minutes.
9. Add a little sugar before serving and boil for a while longer.
二、Method
1. Wash the little yellow croaker and dip it in a little starch. Cut the tofu into long strips and blanch in boiling water, then remove and set aside. Clean the scallions, ginger, and garlic, and chop them into small pieces.
2. Place a pot on the stove and add oil. Once the oil is hot, place each fish in the pot and fry until 80% done, then remove and set aside.
3. Leave some oil in the pot, heat the oil and stir-fry star anise, Sichuan pepper, scallions, ginger, and garlic until fragrant. Add soy sauce, salt, sugar, cooking wine, and chicken essence. Add the little yellow croaker and tofu, and simmer for 10 minutes before serving.
