Ingredients for black pearls: 80 grams of cornstarch, 44 grams of black sugar, 50 grams of water
Ingredients for milk tea: 500 grams of milk, 120 grams of light cream, 45 grams of fine sugar, 2 black tea bags
Steps:
(1) Boil the black sugar cubes with water until the sugar cubes are completely melted, then turn off the heat. After the black sugar water cools down, add the cassava flour and mix well.
(2) Continue to mix the cornstarch until it reaches a semi-fluid state. Take about 1 gram of the prepared cornstarch paste with both hands and rub it into a ball, then place it into the prepared cornstarch.
(3) After completion, roll the black pearls in cornstarch to coat them thoroughly, and finally use a sieve to remove the excess cornstarch and set aside.
(4) Take a slightly larger pot, bring the water to a boil, add the reserved black pearls, bring the water to a boil again over high heat, then turn to medium heat and continue to cook for 20 minutes. After the time is up, turn off the heat and cover for 30 minutes.
(5) Remove and rinse with cold water until completely cooled, then drain and set aside.
(6) Pour all ingredients except the black tea bags into the pot and cook over medium heat until small bubbles form around the edge of the pot.
(7) Add the prepared black tea bags and continue to boil the milk tea until it boils and then turn off the heat. Cover and steep for more than 30 minutes (or until the milk tea cools down). Finally, filter out the black tea bags. Add the completed black pearls to the milk tea to make bubble tea.
