The ‘Maochang belly’ produced in Fujian and Zhejiang is softer than the Guang belly, but it is also a good product. Guang belly and Maochang belly are translucent in color, without black blood stains, and those with larger bodies have strong expansion properties. The yellow fish belly is divided into three types: the thick and large piece is called ‘Tishan’, the thin and small piece is called ‘Diaopian’, and the Tishan and Diaopian with light and bright light yellow color are the best, with good expansion properties. There is also a ‘Dapian’, which is made by drying several small fish bellies together into a large piece, with a color that is not clear and of lower quality, with insufficient expansion properties. The pomfret belly is harder in nature, and the light yellow color is the best product. The worm-eaten and gray-black ones are inferior products.

The front cut is to cut from the upper side close to the backbone, so that the flower jelly dried after cutting is thick in the middle and thin on both sides, with a beautiful shape; while the side cut is to cut from the lower side, with thick edges and thin middle.
