How to make stir-fried green beans
Green beans, as the name suggests, are a food that can be eaten all year round. They are rich in nutrition and are commonly used in cooking. Many restaurants classify stir-fried green beans as characteristic home-style dishes, not only because the method is simple but also because the taste is good. You can also add shredded meat to this dish when cooking at home.
1. Soak the green beans in salt water for about 20 minutes to remove agricultural residues. Remove the tips and cut diagonally with a knife. Mince the pork and garlic, and cut the dried chili into sections. In a wok, stir-fry the green beans with some oil over low heat until they are as cooked as possible, then remove. In the same wok, add more oil, stir-fry the minced pork until it changes color and becomes dry, add cooking wine, shaoxing wine, and a little oyster sauce. Stir-fry to color the minced pork. Add minced garlic and chili to release fragrance, add the stir-fried green beans, and stir-fry well. The green beans must be cooked thoroughly to avoid toxicity. 2. Prepare green beans, minced meat, huangjiu (yellow wine), chili, ginger strips, Sichuan peppercorns, Lao Gan Ma (a spicy bean paste), cooking wine, chicken essence, and set aside. Wash the green beans, cut into sections, and drain the water. Add a little salt, huangjiu, and cornstarch to the minced meat, mix well, heat the oil, add the green beans, sprinkle with a little salt, cover the lid, and simmer for a while. In another pan, add a little oil, stir-fry the minced meat until it changes color, leaving a little oil in the pot. Add chili, ginger strips, Sichuan peppercorns, garlic, and stir-fry until fragrant. Add the green beans, minced meat, Lao Gan Ma, and stir-fry. Serve with a dish.
3. Remove the ends of the fresh, tender flat beans and pinch them into long sections. Heat the oil in a deep fryer over high heat, and add the flat beans when the oil begins to steam. Fry for 3 minutes until the surface of the beans wrinkles and shrinks, then remove and drain the oil. In the same pot, fry the minced pork and garlic, add cooking wine and soy sauce. Stir-fry the mustard greens together and remove. In another pot over medium heat, stir-fry the fried beans until cooked. Add the stir-fried minced pork and mustard greens, sprinkle with dried chili strips, season with salt and chicken essence, and stir-fry well.
