Braised sauce noodles are a northern style of noodles, with savory meat sauce and smooth noodles, which people like to eat. Traditional braised sauce noodles are simply made with minced meat and sauce as ingredients. Later, according to different tastes and preferences, many versions have been improved, such as garlic scallion braised sauce noodles. This is a type of braised sauce noodles that adds garlic scallions as the main ingredient, making the taste better and more nutritious.
Ingredients
Garlic scallions half a bowl, wood ear mushrooms half a bowl, eggs 2, pork half a bowl, soy sauce half a bowl, noodles as needed, salt, sugar, cornstarch as needed, water 3/4 bowl
Steps for garlic scallion braised sauce noodles
Garlic scallions, pork cut into small pieces, and wood ear mushrooms soaked and cut into small pieces
Beat the eggs, add a little oil to the pot, and first stir-fry the eggs. It is recommended to stir-fry them lightly, and quickly take them out of the pot once they start to solidify, as old eggs will affect the overall texture of the sauce.
Add a little more oil than usual to the pot (just a bit more than what is used to stir-fry a dish) and first stir-fry the minced meat until the surface changes color. Then add the garlic scallions to stir-fry, and the garlic scallions need to be stir-fried for a while to release their aroma.
After stir-frying the garlic scallions until they have a fragrant aroma (about 2-3 minutes of fast stir-frying on high heat), add wood ear mushrooms and stir-fry for about a minute.
After stirring the half bowl of soy sauce for a while, add half a bowl of water. At this point, the soy sauce will be more diluted. Add salt and sugar to taste according to personal preference. Different soy sauces can be adjusted freely in terms of the amount of water and soy sauce.
Add eggs and stir-fry, using a spatula to break the eggs into small pieces, so that the eggs are evenly distributed in the sauce. Add the remaining 1/4 bowl of water and a suitable amount of cornstarch to thicken.
Boil the sauce with high heat after thickening until bubbles appear. At this point, the sauce is ready and it is quite thick.
While making the sauce, you can cook noodles on another stove. Both will be done almost at the same time. Pour the sauce over the noodles and you can eat it.
Tips
The vegetables in the sauce can be freely mixed, and it’s also very delicious to replace the garlic scallions with green pepper cubes. If you don’t have wood ear mushrooms, you can omit them. The remaining sauce can be used to dress rice, and fried rice is also very good.
